auditions tonight!

Tonight are auditions for AGNES OF GOD. I read the script back in July, and was going to audition for the role of the psychiatrist. But later realized they want someone in her 40's or 50's for that role. Um, nope. Not only am i only 31, but i LOOK about 21, so not going to happen! Later i was encouraged to audition for Agnes, who is 21, & who gets to sing acapella & who gets to be crazy/psychotic. Fun as that may be, Agnes is a former anorexic & i just don't think i physically fit that role! I picture someone frail (you would too reading the script!), so i won't be auditioning for her either. The only other character is the head nun & they want someone in their 50's or 60's for that, so... yeah. I'll try for this one in about 10years.

But i do LOVE the script. It's very dramatic, okay? And disturbing. Could have been part of a Law & Order SVU episode, for sure. And i like that kind of stuff. But yeah. It's crazy. Heart wrenching. The young nun is accused of murdering her own newborn baby & she swears she didn't even know she was pregnant. The psychiatrist is court appointed & her job is to determine if Agnes is insane or not. It's a great script. So, when the director (of the theatre, not of this play) texted me asking if i was missing them yet & asking if could Stage Manage this production, i agreed. I love stage managing. I do want to get back ON the stage one of these days, but i am not right for these roles & i want to be a part of it. Besides, my FAVORITE stage managing experiences are PLAYS (not musicals) & have small casts (only 3 in this one!). It's on second stage, also, meaning a shorter time commitment (month & a half).

So anyway- Bill Martin is directing. I've worked with him before as an actor - we were in Urinetown together - & i've SM'd another show he was in, i think (though i can't remember what show at the moment, so maybe not?!). He is hilarious, has that dry sarcastic humor that cracks me up. It will be interesting working with him as director since i never have before. I can't wait to find out who the cast will be! Auditions are great fun when you are not the one auditioning! Hehe. Anyway, tonight are auditions & tomorrow are callbacks. Rehearsals probably start next week.

In November are auditions for The Elephant Man & then that will be my last show for awhile, since i plan to go back to school in January!!

Salsa Chicken!


This stuff is DELICIOUS!

It came from SparkPeople's website which is a healthy living site. I don't even remember how i came across it, because i think i've only heard of that site once or twice! But i will definitely be visiting it much more often!

Slow Cooker SALSA CHICKEN

4 boneless skinless chicken breasts
1 cup salsa
1 package reduced sodium taco seasoning (I used half a pkg & that was plenty)
1 can cream of mushroom soup OR 1 can cheddar soup
1/2 cup reduced fat sour cream

Directions:
1. Add chicken to slow cooker (i cut mine into strips).
2. Sprinkle taco seasoning over chicken.
3. Pour salsa & soup over chicken.
4. Cook on low for 6-8 hours.
5. Remove from heat & stir in sour cream.
6. Serve over rice.

The actual recipe said cream of mushroom soup, but several reviewers of this recipe said they used cheddar instead & that is what i did. It was perfect! I only used half the pack of taco seasoning & i think any more would have been too much! Others said they served it with black beans. Also, a lot of reviewers said they used it on a tortilla the next day for leftovers. I'll have to try that tomorrow. :)

How easy is that recipe?! & it was so good!!! A keeper, according to hubby!

By the way, i hit google images & entered "salsa chicken" to find a picture of it & there it was...exactly what mine looked like. The picture came from this lady's blog "What's For Dinner?"" The only difference in her recipe & the one on SparkPeople is that she mixed the soup & salsa before pouring it over the chicken & she shredded the chicken when it was ready, which is a great idea. Very cool blog if you want to check it out!

I love Saturdays!!!

Today i slept till about 9 (ahhhh!) & it was wonderful! Then, I...

unloaded the dishwasher
loaded the dishwasher
cleaned the counters
picked up around the house
made our bed with clean sheets
did two loads of laundry
put dinner in the crockpot
& made some tea

...and now i'm relaxing! Whew!

We are just taking it easy today. Brad is in his studio but later i'm sure we'll watch the last two episodes of Law & Order SVU, season 1. We don't have cable but we do have Netflix, so we've been watching the show from Season 1 on my laptop. Not too bad, but he got a cable that you connect from the TV to my laptop & then we could watch it on the actual TV screen... but for some reason it won't work. Oh-well.

When the sun goes down, we're going to go ride bikes or go walking. :) By the way, if you didn't know, i do have a blog all about my struggle journey towards weight loss. Feel free to read that one to & become a follower of it if you want! And leave me encouraging comments! Trust me, i need all the help i can get!!

the weekend is here!

I love the weekend. I think i love it more than the average person, though i'm sure that might not be true. Though many are in satisfying enjoyable careers & i am not, so i'm thinking that Fridays might be a bit more of a relief to someone like me.

So the weekend is here & i am so glad!

Today after work i had to go out to my bank, which is all the way across town. I NEVER go out there anymore (my bank has only one location in town. Crazy.) Anyway, since i was out there, i went in Target, because (1) once again, i'm never on that side of town & the other Target is even farther! & (2) i have a gift card to Target. So i went. And, stocked on a few needs & wants. =)

Then, i stopped at JC Penney because i heard they are having a sale & because brad desperately needs black slacks. He has choco brown & khaki, but his black ones no longer fit (a mystery since they are the same size & style as the other ones, which still fit perfectly!). Anyway, i went into JC Penney & hit a sale! YAY! I love it when that happens! All the men's stuff was 50-75% off! I thought i'd only be able to afford a pair of pants, but i got him the black pants, some navy shorts & a royal blue striped polo! I was pumped!

On tomorrow's agenda is... NOTHING! I don't have anywhere to be (& most likely will keep it that way!) & Sunday, i have church & we also have auditions at 5:30 for Agnes of God, a play on BRLT's second stage. I am Stage Managing. I can't wait!

Hmm...

So, i have printed out the curriculums for the following:

SLU - Elementary Ed (grades 1-5)
SLU - Middle School Ed (grades 4-8) (I would be teaching English & Social Studies)
SLU - Secondary Ed (English, grades 6-12)
LSU - Elementary Ed (grades 1-5)
LSU - Secondary Ed (English, grades 6-12)- Apparently you have to do a 5-year program & get your Master's at LSU? I can't imagine that is true, but everything i'm finding on their website suggest that. If so, i will not be doing that! It's amazing enough I'm going back to school! Grad school? Not gonna happen!

I printed each curriculum out & highlighted the classes that i have already taken.
The sad news is that, although i have plenty of english classes, i don't have the English classes that are required for the middle or secondary ed programs. I have a lot of writing classes, but literature classes are required. Unless SLU or LSU will let me substitute the classes i have for the ones i should have, then i will probably be in school for 3 or more years. But if they would let me use those classes, then maybe just 2. Which would be SOOO awesome. :)

The program that appeals to me MOST is SLU's middle school program. I like it because it is for grades 4-8. I could teach middle school English & Social Studies & i think i would enjoy teaching that most; but if not, i could do upper elementary. That is the one that is ideal to me. But there are downsides to going to SLU that i also have to look at (having to do with its location).

I think no matter which program i choose, it will take me at least 3 years. I had thought 2 but, unless they let me use my other English classes, it's not going to happen!

I have awhile to decide for sure & no matter what I'm starting out at BRCC. It is right by my work, 20 minutes from my house & much more convenient. & i know i can pass Math & Science there! If Southeastern & LSU were both in Baton Rouge, i'd go to SLU just because of that middle school program. But SLU is an hour from my house & that is without the traffic! I could handle that 2 or 3 days a week, but student teaching is daily & they send their student teachers to Livingston & BEYOND. I would do Livingston. But anything farther...not so much. LSU is not far from me at all. And i liked it when i went there before, even though i didn't do well. It's a great school. So is SLU. So i just don't know.

All of this is IF i get approved for financial aid! I can't do a loan. I am just now paying on my loans from ages ago & just do not want to add on to that! So i'm praying i get financial aid!

I am planning to take the ParaPro exam on Friday, September 25th. It is the test to allow you a job as a Para (teacher's aid). That way i could get in the classroom (& out of the office!).

Decisions, Decisions


Ok, so i've gotten a bit of sound advice from someone who looked at my transcripts. She says the QUICKEST degree for me would be to do Middle School Language Arts at Southeastern. I am not opposed to this. Secondary Ed with an English concentration was actually my major when i was in school, which is why i have so many English classes on my transcripts. I can totally see myself teaching middle school english & social studies, but we shall see.

I just filled out the FAFSA. It says 3-4 days for it to be processed, but it says that based on what i have entered it looks like i could qualify for a low interest loan. But i am not doing this without grants! I think at this point, i will cry if i can't go back to school. But i can't if i have to pay for it. I am already paying on the loans from back in the day (because i waited till forever to pay them off) & i don't want to add to that! But it would be worth it for me if i got a grant. It would actually be worth it to me if i DIDN'T, but paying for it is just something we cannot do. Fingers crossed!

I am more encouraged after my friend looked at my transcripts. She says if i do middle school language arts, i'm more than halfway done. But it's just something to think about. If i decide i still want to stick with elementary education, i have to just figure out which school would let me do this in the quickest way. Downside to SLU is that it is an hour from my house. But if it gets me out of school faster... maybe. It's just a lot to think about. (From what i've heard, Southeastern also has a top notch education department.)

I will go to talk to a counselor at Baton Rouge Community College this week & see what they say. That is where i want to start anyway. Please be praying for me!

important announcement!

I have decided i want to be an elementary school teacher. I've decided this for sure. So, i'm now looking into what i need to do to get there.

I can't believe i'm doing this. If you know me at all, you know i have sworn i would never go back to school. And yet, here i am.

Please pray for me. I am looking at transcripts that are causing me to feel like such a loser. Such a failure. I am regretful of things that i cannot take back. If only you could see these transcripts. Such a waste. I know it is never too late! It's just that i wish i'd either not gone at all till i was ready, or that i had gone & buckled down & did what it took to succeed. Oh, why must it be so difficult?

So i am desperately wishing that TODAY I could find a job in a school as a para (teacher's aid) so that i would at least get some classroom experience & so that i would be in a classroom period- as opposed to a cubicle! But there are requirements to being a para that i do not have. SO i am looking into those as well.

i honestly would leave my job if i could make it just substitute teaching. but they pay non-degreed subs WAYYYYY less than i make now. That would not work for us! But a para job would be a small pay raise.

i am looking into the best way for me to get my education degree. I need MUCH PRAYER that i will do the right thing & not waste any more years as i have done in the past!

Dinner at Deangelo's

Last night we went to dinner with a whole bunch of people. My good friend, Amanda, & her boyfriend, Matt, were in from California & invited a ton of friends for dinner so they could kind of see everyone at once - since they're only in town for a few days!

It was a great group of people. A whole bunch of us went to church together at Victory 4 years ago (has it really been that long?!) & so it was wonderful to see all of them! Plus there were some that i still get together with but don't get to see too often! And then some new faces that i got to meet for the first time, though i've heard all about them from Amanda! Anyway, Brad & I had a great time at Deangelo's. :)

Granny

Please be in prayer for Brad's sweet Granny. She had a heart cath today & then we were told she has to have open heart surgery in the morning. Surely everything will be fine, but please keep her in your prayers! Surgery is at 9 am. Brad & i will be there.

We love Granny & want her to stick around here a little longer. :)

So, don't you just love it when - after being really upset or frustrated with a situation - you suddenly see it from God's perspective? A perspective above your own, the RIGHT perspective & suddenly you just GET IT? You didn't even realize you were having the wrong attitude but suddenly you just see something CLEARLY where you weren't seeing well at all before? Am i making sense here??

Okay, so, when i got engaged to this handsome sweet husband of mine, i knew that he lived in (owned) a trailer & that was where we'd live for a few years. I was fine with that, but hoped & prayed (& sometimes made comments about the fact) that i would NOT raise our children in a trailer. At first it was just a comment i made every once in awhile. But then day after day friends (usually newlywed friends) would post about finding their first home & buying it & i would get SO jealous. I am not a jealous person. The feeling is so rare for me i was surprised i knew what it was. I hate jealousy. But there it was in my gut. I wanted a house. I didn't have one. Everyone else was getting one. Not fair! Whine whine whine.

Since Brad seemed to care less about getting a house, I worried we wouldn't get ours until our kids were teens. I imagined myself couped up in this small trailer with three kids & only room for one of them, beds in the living room & me getting so tired & frustrated with it. I hate clutter & i just would go crazy in an environment like that! And i just didn't want that for our family. It wasn't a case of "keeping up with the joneses" (though that is how i made it seem when i would get very jealous of our home-owning friends), it was just that i want our children running in a backyard (which we don't have at this time) & i picture me with more cabinet space. Enough space for kid's rooms & their dad's studio...you see what i mean. I think in wanting a house SOOOOO BADLY i unintentionally put pressure on Brad that he did not need & made him feel like crap. Confession: I would even cringe when i told friends i lived in a trailer park (when giving directions to our house) & i'm sorry for that & i realize now how ridiculous that was. Our trailer is in a nice & quiet neighborhood. They are cute little places & when i moved in we painted & made things less "bachelor pad". It's nice. I have never thought less of anyone who lived in a trailer, but for some reason i acted as if it was just deplorable conditions. Please. :(
Well, one day last week, i was just in lala land (a common thing for me), daydreaming & (i know i'm wierd, but this is just how it goes with me!), one thought led to another & somehow i got to thinking about things i WANT. Versus things i NEED. My thoughts went something like this:

  • flat iron- definite need. mine keeps breaking.

  • really nice mega zoom camera- WANT.

  • new kitchen sink faucet- need. ours is broken.

  • mini cooper. want. will never happen. (won't fit kiddos, where i can comfortably get them out at least) :)

  • house- want.
Wait. House. Want. House- WANT?!?!
And then it hit me. & at first i told Brad that it hit me hard. But really it hit me gently. Does that make sense? Because i really just felt like it was God patiently explaining something to His daughter. It was just like this: A house is a want for you. It's not a need. It's just a want right now. But rest assured- when it goes from "want" to "need", don't you worry. I will take care of you both. You will have your house when you need it. But right now- 2009- what you have is absolutely perfect...that's what i felt Him saying. And i am so thankful. (& i know Brad is too!)

Fievel is 5!


So, i used to be OBSESSED with dogs, to the point where people would buy me doggie-items, such as the pj pants with little dogs all over them- but i absolutely was NOT going to get one. I mean, i was a college girl, lived on my own, could barely afford rent, much less a dog! But i went to the restaurant my sister co-owned at the time & one of the waitresses had a little tiny 6 week old Shih Tzu there, ready to be sold. I held him & he looked up at me & i am telling you: it was love at first sight. I HAD TO HAVE HIM. But how would i take care of him? I ended up getting him. And, regretted it. For about the first year. He was so cute, but SO BAD! And i was just never, ever home so he spent many hours stuck in my bedroom...
These days he has the LIFE! Now, even if i am doing a show, Brad is always home. Fievel is as much his as he is mine! Brad's got a stepson! Hehe. But i am home a lot more than i was at the time. Fievel is more affordable these days, i suppose, but mostly he's much sweeter!! He can definitely be a rascal, too, though!

HAHA. i feel so corny writing this, because i can absolutely promise you that i am not one of those silly girls that carries their dog in a purse & dresses him up!! But i do love my sweet dog, Fievel. :)

veggie dish!


I made this "Summer Vegetable Bake" this weekend & it was delish!! If you are not a veggie eater, this probably isn't for you. But if you are, it's so good! Also, i think this particular recipe made it a little more difficult than it needed to be! So read it over & think about shortcuts if you decide to try it!! I did it exactly how they said because when i first try a recipe i have a silly fear that it will be gross if i don't follow it exactly. I usually regret that later! I want to try this one again & play a little more. Anyway, here it is:

Taste of Home's Summer Vegetable Bake
SERVINGS: 12

Ingredients:
1 small head cauliflower, broken into small florets (about 5 cups)
1 medium bunch broccoli, cut into small florets (about 4 cups)
1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon butter
2 medium tomatoes, chopped
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon hot pepper sauce
4 eggs
1/3 cup half-and-half cream
1-1/2 cups (6 ounces) shredded Swiss cheese, divided
1/4 cup shredded Parmesan cheese

Directions:
Place the cauliflower and broccoli in a saucepan with a small amount of water. Bring to a boil. Reduce heat; cover and simmer for 5-10 minutes or until crisp-tender. Drain and set aside.

In a large skillet, saute onion and garlic in butter until tender. Stir in tomatoes, seasonings, cauliflower and broccoli. Cook, uncovered, until heated through, about 4 minutes, stirring occasionally. Remove from the heat and set aside.

In a large bowl, beat eggs and cream; stir in 1 cup Swiss cheese, Parmesan cheese and the vegetable mixture. Transfer to a greased shallow 2-qt. baking dish. Sprinkle with remaining Swiss cheese.

Bake, uncovered, at 375° for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before serving. Yield: 12 servings.

9 months ago...


9 months ago Brad & i tied the knot! It is so wierd for me to think of myself as a married woman! I was single with no prospect in sight for 11 LONNNNG years! And then Brad came back into my life out of the blue & we were married less than a year later! It was a whirlwind romance, but with someone i'd known my entire life! And I love him more than anything.

People said "just you wait" while we were engaged. Over & over again they said it. We were two lovebirds & people are just so used to all lovey dovey stuff ending. I guess there are so many people out there who have been hurt, so many people whose marriages have turned sour, that they expect it's just a part of life; just how it happens for everyone. But that is not true! We have been so blessed! I know it's only been 9 months- it's not like i'm an expert or anything! But i will tell you that our marriage so far has been NOTHING but a blessing. Yes, you do have to work at it sometimes. You do have to talk things out if you want your marriage to work (seriously...i think in years to come we will have said that our marriage has been successful because we communicate about EVERYTHING & do not allow room for resentment or grudges to take place).

I am so glad i married him! Everyday i am so thankful for the man that God gave me to be my husband. We have so much fun, laughing together, talking together. Just tonight he wrapped his arms around me when i was in tears. He always brightens my day. He is just a wonderful person all around & i am so very thankful to be his wife.

My dog, Fievel!


Fievel got groomed today!! I take him to "Petworks" on Greenwell Springs Road & they do the BEST job. He has been going there since he was a puppy. I have moved several times since then & everytime I'd move, i'd try to find a groomer in the area. But everytime i was disappointed for one reason or another. Petworks is nowhere near my house, but i go out of my way to bring him there on my way to work & then i have my mom pick him up. CRAZY! But worth it. :) Now, mom has her own Shih Tzu, Molly. So both of them went to the groomer together today. And, as usual, once i got home with Fievel, he SACKED OUT!!! That grooming place wears him out!!

Yummy! Taco Salad!



Last night, i made Taco Salad. It was delicious. I mean, DELICIOUS!!! I think you want the recipe (or you should)! Today's leftovers are even better!! I have to say, though, that if i had it to do over again- & i'm sure i will at some point!- i would put the salad dressing in GRADUALLY. Not just measure & pour. Of course you already knew that. I mean, it's logical. But i've only been cooking for a short time & sometimes forget that i can experiment & do not have to follow the recipe 100%! :) Anyway, it was still very good! But i do think the dressing was a bit too much. I also think it'd be okay to not put in dressing at all & just add it to the individual serving. I don't know. Just some thoughts. But it was really tasty!! :) & feeds an ARMY, so plenty of leftovers!

Taste of Home's Taco Salad:

1 1/2 pounds ground beef
2 envelopes taco seasoning (i only needed one)
1 medium head iceberg lettuce
1 package (14 oz) tortilla chips, crushed
2 pints grape tomatoes, halved (brad hates tomatoes so i used a little less)
2 cans kidney beans, rinsed & drained
3 cans black olives, sliced & drained (i only used 2 cans. i hate olives but brad loves them so i included them. you can't taste them, really. they only add to the flavor!)
1 1/2 cups shredded cheddar cheese (i used 2 cups - sorry...love cheese!)
1 large sweet onion, chopped
2 cans chopped green chilies (i used WAYYY less than this! too spicy!)
1 1/2 cups Thousand Island Dressing (should not have used this much! still good though!)
1 jar (11 ounces) salsa (my jar was 16 ounces & i used the whole thing).
1/3 cup sugar (i don't think this is necessary, really)

In a dutch oven over medium heat, cook the beef with 1 envelope plus 2 tablespoons taco seasoning until no longer pink; drain.

In a very large serving bowl, combine lettuce, chips, tomatoes, kidney beans, olives, cheese, onion, chilies & beef mixture. Combine the dressing, salsa, remaining taco seasoning & sugar seperately. Pour over salad & toss to coat. Serve immediately.

Dinner Party at Eleanor's!

Last night i was invited to a girl's night at Eleanor's (who i met during King & I - she played one of the wives). We had a fantastic time! We had steak, mashed potatoes & asparagus & a yummy fruity tart thingy for dessert. :) After eating, we played games: Taboo, Scattergories & Apples to Apples! It was a fun night! A whole lot of laughter & goofing off!! Some pics...

Fun Times!

We had so much fun last night! Got together with two of my bestest friends & their hubbies. We've been meaning to do this FOREVER, but you know how it is. Crazy. Anyway, we met for dinner at Lagniappe, a restaurant near our place. It was delicious. Then the girls went straight to my place, while the boys ran to Walmart for some ice cream!

At home, we played Phase 10. YES! And...guess who won?! Yours truly!!! :) :) I was happy! :)

Cookie Dough Topped Brownie?!!!?!

Okay. So, the other day i came across a blog called "My Kitchen Cafe" while looking for some dinner recipes. I found some great ones, and somewhere along the way i found this...

OH. MY. GOSH. Do you have any idea what this is? Well, the bottom half is BROWNIE. And the top part is...get this... COOKIE DOUGH. Brownie & Cookie Dough! Yes! Can you imagine?! I simply HAD to try out this recipe. Especially because Brad LOVES cookie dough. I would rather have a cookie, but Brad would much prefer the cookie dough! Anyway, so, i made them. & Brad was a VERY happy hubby! Yes, i know this isn't the most ideal thing for someone to be eating when they are on a diet. But, thankfully, i am NOT eating it. I am only MAKING it. Actually, okay, i did have one small piece. And it was DECADENT. No other word applies. Here is the recipe for those of you who, unlike myself, can actually afford to eat something like this!!
And, i have to tell you, i tried this an hour or so after it was made & i didn't think it was anything special. i mean, it was good, but it wasn't anything to write home about. I know she said to chill, but it didn't say how long, but wow. After leaving it in the fridge all day today & then coming home & tasting it... AMAZING. It's Delicious!!!

Cookie Dough Topped Brownies

Brownie Layer:
1 12-ounce bag semi-sweet chocolate chips
1 cup (2 cubes) butter
1 1/2 cups sugar
1/2 teaspoon salt
4 large eggs at room temperature
1 1/2 cups flour

Preheat oven to 350 degrees. In a medium saucepan over low heat, melt butter and chocolate chips. Stir constantly and remove from heat when chips are fully melted. In the same pot, blend in the sugar. Then add eggs, blending fully one at a time. Add flour and salt and beat until air bubbles form in the batter. Pour into a greased 9 X 13-inch pan. Bake for 20 minutes. Turn heat down to 325 degrees and bake for 10 more minutes.

Cool completely and then top with the cookie dough layer.

Cookie Dough Layer:
1/2 cup (1 cube) butter, softened
1/2 cup dark brown Sugar
1/4 cup granulated sugar
3 tablespoons milk
1 teaspoon vanilla extract
3/4 cup all-purpose flour
pinch of salt
1 cup semisweet chocolate chips

In a small bowl, cream butter and sugars until light and fluffy. Beat in milk and vanilla. Gradually add flour and salt. Stir in chocolate chips. Drop by tablespoonfuls over cooled brownies; carefully spread over top (this can be tricky but I found the best way is to slightly wet my hands and pat the dough down gently so it doesn't pull up the brownies. Cut into squares & chill.
