Chicken Cheese & Rice!

My mom made this a lot growing up. I asked her for the recipe when I got married & have made it several times since. I made it tonight & served Green Beans as a side dish. Brad LOVES Chicken Cheese & Rice. He always eats a ton, hahaha.

It is the easiest dish you will ever make & it is delicious. So simple! And not only is it husband-friendly, but it's definitely kid-friendly, too! No, i don't have kids yet, but i ate this plenty as a kid!

(Hint: If you like chicken & cheese & rice, you will like it.)

Chicken Cheese & Rice
Serves 6

Chicken Breast, cooked (i just pick up a rotisserie chicken!)
3 cups rice (or however much you like!)
garlic salt
4 T. butter or margarine
4 T. all-purpose flour
salt & pepper
2 cups milk
8 slices kraft singles (american cheese) or 2/3 cups shredded cheese

1. Cook Rice
2. Cook Chicken (or buy a rotisserie one!)
3. Melt margarine over low heat. Remove from heat & stir in flour, salt & pepper. Return to heat & add milk. Turn on high & stir constantly till mixture thickens & bubbles. Remove from heat & add cheese gradually. Stir till melted. (Warning: this cheese might make you want to go a little overboard. It's soooo good!)
4. Put rice on your plate. Top with chicken. Pour some of the cheese on top it. Voila!!!
