Friday Night Soup!

I am officially on a soup kick. I made Chicken & Vegetable soup the other day & it's all gone. Today i made another one & i wish i had the ingredients for another one! It's just the perfect thing for this cold weather & for the sickly.

Today i made one from The Complete Slow Cooker Cookbook. It's called "Friday Night Soup" (for whatever reason!) & it was delicious!

Friday Night Soup

2 T. vegetable oil
1 - 1.5 pounds ground beef
1 medium onion, chopped
1 green bell pepper, seeded & chopped
2 stalks celery, chopped
2 carrots, sliced
1/2 (10 ounce) package frozen lima beans
4 cups beef broth
1 (14.5 ounce) can whole tomatoes with juice, broken up (I used diced, not whole)
2 tsp. Worcestershire sauce
1 tsp. dried basil, crushed
1/2 tsp ground black pepper
1 bay leaf
1 cup frozen whole kernal corn
chopped fresh parsley, for garnish

Heat the oil in a large skillet over medium heat, & brown the ground beef along with the onion & green bell pepper; drain. Place mixture in slow cooker. Add remaining ingredients (except the corn) to slow cooker. Cover with the lid & cook on low for 5-6 hours. In the last hour of cooking, add the frozen corn. Remove bay leaf before serving. At serving time ladle into bowls & garnish with freshly snipped parsley. Serve with crusty french bread.

(I served with whole wheat rolls - delicious!)

  1. Sounds Yummy!!! Soup is just wonderful when it's so cold outside! ...I can't eat soup in the summer, it makes me sick at my stomach!
