I FINALLY tried a recipe from SkinnyTaste. I have been blog stalking this one for awhile now & am glad to finally be using one of her recipes. It's a "skinny" recipe & i definitely should be trying more of those! These were amazing. I have never made anything like this, but i am happy to say it was VERY easy to make & VERY good! My husband loved them & ate them up. YUM!
Chicken & White Bean Stuffed Peppers
2 tsp. extra virgin olive oil
1 onion, chopped
4 cloves garlic, chopped
1/2 red bell pepper, chopped
1/4 cup cilantro (or parsley)*
5 green bell peppers
14 ounces shredded chicken breast
cumin
adobo (or salt - i used salt)
15.5 ounce can white beans
1/2 cup shredded cheddar (i used colby/monterrey jack blend)
In a medium pan, heat oil on medium heat. Add chopped onions, garlic, parsley & red pepper. Saute until soft, about a minute. Add chicken & season with cumin & salt (or adobo).

Add beans & 1 - 1 1/2 cups water & simmer about 5 - 10 minutes, until it thickens & water reduces. Adjust spices to taste.

Preheat oven to 350 degrees. Cut peppers in half removing stem & seeds. Place peppers in an oven proof dish. Fill each pepper with 1/3 of chicken & bean mixture.
in case you're wondering why there's one red? i used the other half of the chopped one. :)
Pour about 1/3 cup water or chicken broth into the bottom of the dish. Cover tight with foil
. Bake 30 minutes at 350 degrees. Remove foil, top with cheese & bake uncovered for 15 more minutes.
