classic cheesy chicken pot pies

Last night i made Jenny's Chicken Pot Pie. Well, her "Classic Cheesy Turkey Pot Pie" actually. Only i used chicken. And biscuits, because i like my pot pie topped with biscuits! But, wow. I think this is the best pot pie I've ever had! Delish! Thanks once again, Picky Palate! :)

Classy Cheesy Chicken Pot Pie

I used my new Williams Sonoma Bowls. :) Love them!

3 Tablespoons EVOO
1 1/2 cups white onions, finely chopped
1 cup carrots, finely chopped
1 cup celery, chopped
1 cup frozen peas
1 cup steamed broccoli
2 cups baby red potatoes
2 cups cooked shredded chicken breast (or turkey)
1 Tablespoon fresh minced garlic
1/2 stick butter
1/2 cup flour
1/2 tsp. salt
1/4 tsp. fresh cracked black pepper
3 1/2 cups chicken broth
1 1/2 cup shredded cheddar cheese
1-2 cans of biscuits (i used the kind pictured below)
1. Preheat oven to 350 degrees F. Heat oil in medium dutch oven over medium heat. When hot, saute onions, carrots and celery, for 8-10 minutes or until softened. Add in peas, broccoli, and potatoes. Stir and cook for 5 minutes then add in the garlic; cook for 1 minute then add chicken (or turkey) breast. Reduce heat to low.

2. In a medium saucepan melt the butter over medium high heat; whisk in flour, salt, and pepper for one minute. Slowly whisk in chicken broth until thick and creamy, about 3 minutes. Once thickened, stir in cheddar cheese until melted. Pour sauce over turkey and vegetables. Mix together.

3. Divide filling into 6 individual pot pie bowls OR 1 casserole dish. Layer with biscuits. Bake at 350 for about 15 minutes (or until biscuits are golden brown). (I used 2 of my new dishes because i wanted to see how they did in the oven. I put the rest in a smaller casserole dish. I baked for 15 minutes & it was perfect!) {This is where you'll want to look at Jenny's recipe if you are not going with the biscuits. The cook time may be a little longer.}
