Crockpot Sante Fe Chicken....Mmm!

I have been meaning to blog this recipe for several days now! I just haven't gotten a chance! But seriously, y'all. Low in calories. Goes in Crockpot. And DELICIOUS! 

Oh, man. It was SO good.

I got this from SkinnyTaste. If you haven't been to her blog (especially if you're trying to lose weight &/or be healthy), you should check it out! She has the best recipes! And she includes all nutrition facts, including weight watcher points. Which wasn't a big deal to me until now (i joined WW last Friday). 

ANYWAY. Here it is. 

Crockpot Sante Fe Chicken.

  • 24 oz (1 1/2) lbs chicken breast
  • 14.4 oz can diced tomatoes with mild green chilies
  • 15 oz can black beans
  • 8 oz frozen corn
  • 1/4 cup chopped fresh cilantro
  • 14.4 oz can fat free chicken broth
  • 3 scallions, chopped (i didn't have these)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper (to taste)
  • salt to taste
  • sour cream, cheddar cheese for toppings, if desired
  • rice, tortilla chips, or taco shells, if desired (also very good by itself. kinda like taco soup!)


1.) Combine chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the crockpot.

2.) Season chicken breast with salt and lay on top. 

3.) Cook on low for 10 hours or on high for 6 hours. 

4.) Half an hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. 

5.) Adjust salt and seasoning. Serve over rice, tortilla chips or in a taco shell. :) Top with shredded cheddar &/or sour cream, if desired. (Extra points/calories.)

SO GOOD! Brad loved it too & we had leftovers for a couple days. YUM!
