Omelette Scrambles...yummy!

We love omelettes.

LOVE.

They are so delicious & you can put pretty much whatever you want in them.

The first few times I made them, i couldn't flip them right. It turned into what we call an "omelette scramble". I now make it like this on purpose all the time. Even though I know how to flip them now! Brad prefers them scrambled & i think i do too. Yum!

Just thought I'd share how i make them.

You will need (for two people):
6 eggs
2 T. milk, half and half, or whipping cream
2 cups broccoli (or whatever you like)
1/4 cup feta (or whatever cheese you like)
kosher salt
black pepper
garlic salt

I wish i was a cool food blogger who took the pic of all the ingredients first. But i never remember to do that. But first...steam some broccoli. If you do not like broccoli, you can use pretty much any green veggie. If you do not like green veggies, well. That's really sad. Because they're delicious & so good for you! Examples of what you could use besides broccoli: spinach, green onion, green bell pepper, asparagus, olives, artichokes...the list goes on & on!

But we like broccoli. :)


While your broccoli is steaming, spray a medium-large skillet with Pam. I have discovered that using Pam instead of butter or olive oil will help you with the flipping process. If you desire an omelette & not a scramble. :) I use the Pam with Olive Oil.

Crack 6 eggs into a bowl. Add in 2 T. of whipping cream, milk, or half & half (i used whipping cream, so if you use skim milk, it'll be even healthier!). Sprinkle with kosher salt, pepper, & garlic salt. Whisk away!

Once that is done & your skillet is warm, pour the eggs into the skillet. At this point you should set your skillet to medium/low & leave it alone. Let it cook underneath & along the edges. Unload the dishwasher or something. :)



Once it looks like the above pic, add your broccoli...or whatever veggie you chose.



Then sprinkle with cheese. I used feta this time, but it varies. Some of the healthier cheeses are mozzerella, feta, swiss & pepperjack. Cheddar is the worst cheese for you. I'm reading about nutrition. I was very sad about this because cheddar is my fave. It's okay, though, because i've never met a cheese i didn't like. (Except for blue cheese, maybe. Not a fan.)


At this point, if you want an omelette & not an omelette scramble, you should flip it over & allow it to cook in the middle. But if you're like me & you have a husband who prefers the scramble... just go ahead & start scrambling it.



It's SO GOOD!





Serve by itself or with a piece of whole wheat toast. Yum!

  2. I love that you used feta. I'm not normally a huge fan of cheese in my omelettes, unless it's feta. And if that's the case, pile it on!
