Three words for you: Easy. Cheap. Crockpot.
I KNOW.
I made this recently & it was SO good! Incredibly easy & very cheap, too! We had it for leftovers for days! I plan to make it again real soon!
(I totally forgot to take pictures this time. I have no idea what was wrong with me!)
TACO SOUP FOR THE CROCKPOT
1 pound ground beef
1 red onion, chopped
1 can corn, undrained
1 can black beans, undrained
1 can kidney beans, undrained
2 cans chopped tomatoes with chiles
1 15 oz can tomato sauce
1 envelope taco seasoning (or 1/4 cup if you get in bulk)
tortilla chips, optional
sour cream, optional
shredded cheese, optional
Brown beef in a large skillet. When it is close to done add chopped onions and mix well. Cover and continue to cook until onion is soft.
Dump onion and beef with remaining ingredients into a large crockpot. Mix well. Cook on high for 4-6 hours.
Optional - Top with shredded cheese & sour cream, serve with tortilla chips.
