Omelette Scrambles...yummy!

We love omelettes.

LOVE.

They are so delicious & you can put pretty much whatever you want in them.

The first few times I made them, i couldn't flip them right. It turned into what we call an "omelette scramble". I now make it like this on purpose all the time. Even though I know how to flip them now! Brad prefers them scrambled & i think i do too. Yum!

Just thought I'd share how i make them.

You will need (for two people):
6 eggs
2 T. milk, half and half, or whipping cream
2 cups broccoli (or whatever you like)
1/4 cup feta (or whatever cheese you like)
kosher salt
black pepper
garlic salt

I wish i was a cool food blogger who took the pic of all the ingredients first. But i never remember to do that. But first...steam some broccoli. If you do not like broccoli, you can use pretty much any green veggie. If you do not like green veggies, well. That's really sad. Because they're delicious & so good for you! Examples of what you could use besides broccoli: spinach, green onion, green bell pepper, asparagus, olives, artichokes...the list goes on & on!

But we like broccoli. :)


While your broccoli is steaming, spray a medium-large skillet with Pam. I have discovered that using Pam instead of butter or olive oil will help you with the flipping process. If you desire an omelette & not a scramble. :) I use the Pam with Olive Oil.

Crack 6 eggs into a bowl. Add in 2 T. of whipping cream, milk, or half & half (i used whipping cream, so if you use skim milk, it'll be even healthier!). Sprinkle with kosher salt, pepper, & garlic salt. Whisk away!

Once that is done & your skillet is warm, pour the eggs into the skillet. At this point you should set your skillet to medium/low & leave it alone. Let it cook underneath & along the edges. Unload the dishwasher or something. :)



Once it looks like the above pic, add your broccoli...or whatever veggie you chose.



Then sprinkle with cheese. I used feta this time, but it varies. Some of the healthier cheeses are mozzerella, feta, swiss & pepperjack. Cheddar is the worst cheese for you. I'm reading about nutrition. I was very sad about this because cheddar is my fave. It's okay, though, because i've never met a cheese i didn't like. (Except for blue cheese, maybe. Not a fan.)


At this point, if you want an omelette & not an omelette scramble, you should flip it over & allow it to cook in the middle. But if you're like me & you have a husband who prefers the scramble... just go ahead & start scrambling it.



It's SO GOOD!





Serve by itself or with a piece of whole wheat toast. Yum!

Mini Coopers, first dates & friendship.

Today I am off work. Yeah! Ask & you shall receive. I needed it. Work has been STRESS. But today? RELAXATION. And hubby is off too! Yay!

Time for a highlight of my week. Five Question Friday.







1. If you could buy any car, money not an option, what would you buy?

Confession. I know NOTHING about cars. I can tell if something is a car or an SUV or a truck, but that's about it. Okay, i take it back. There are certain times i know what something is. Like a mini cooper. Or a bug. Or a mustang. I know all the easy ones!

I really would love a nice new car. I would like it in black. I would like it to be an SUV. And, well. That's about it!



Though i have to tell you. The only car i really & truly LOVE is a mini cooper. I say that will be my mid-life crisis car, because it would be silly to get one now when there are car seats & diaper bags in my future. :) As it is now, i carry enough stuff around with me to make a trip in a mini-cooper a bit of a pain. But with kids? No. It wouldn't work. So i'll take a really nice SUV. Plenty of room & cool compartments & stuff. That'd be lovely.


2. What was your worst first date ever?
Okay, first dates are awful. I'm glad i only had a few. None of them were terrible. I mean, terribly awkward, yes, but nothing horrible happened.

I had a bad second date however. I once went on a date with a guy i met online. I forget what it was called, but it was a christian site similar to match.com. Oh, yes. Single at 29 & i was getting desperate! Anyway, he immediately thought i was "the one". He played it cool, though. I wasn't sure how i felt about him so i gave him one more chance. Our second date was AWFUL. He got on my NERVES. Everything he said annoyed me. He asked if he could kiss me every five minutes because I was definitely 'the one' & he was in LOVE. RIGHT. I normally wouldn't have wanted a guy to ASK to kiss me...just do it already...but i was RELIEVED this guy asked. Because the answer was something along the lines of "NO INDEED NOT!"

Haha. We never went out again. And i was done with online dating.

And Brad called about 2 months later. THANK YOU, LORD!


3. How old were you when you fell in love for the first time?


It was 1996. I was 18. And it was with Brad, my now husband.
Many of you know the story. We broke up a year after we started dating & stayed broken up for 11 years. Until he called me out of the blue in December of 2007. During those 11 years, i came to understand that i wasn't truly in love or we would have stayed together, ended up getting married. But as it turns out, it WAS true love...just not the right timing. I fell in love with him all over again in February 2008.

{Happy sigh.}

4. When was the last time you reconciled your checkbook?
I actually MUST do that TODAY!
I don't actually write it down in a check register anymore. I save receipts. And I have a budget. I know it in my head & i try to stay within that budget. Then at some point (it should be weekly or at least once every two weeks! But i confess it's been a month), i will get on the computer & go to the budgeting program my husband set up & "balance my checkbook". It's the same thing. Just using my receipts & my online banking tool thingy. It all works very well. Only it's been longer than usual & that's kind of scary! It is on today's to-do list & it must get done!

5. If you were going to fashion a "want ad" for a best friend, how would you word it?

Seriously? Not necessary. I have lots of best friends. And yes. They're all my best friends.

You get the point? I am SOOOO blessed in friendship, it's ridiculous.

But, to answer the question:


Goofy girl seeks best friend for movie dates, dinner dates & girl talk. Must be compassionate, loyal & easy-going. Must understand an insane theatre schedule, homebody tendencies & an inability to pay attention. Good listener, silly & loyal to a fault.

That is all.

Okay, i just laughed when i re-read that. Good listener but an inability to pay attention? Okay, I have been told many times that my best quality is that i'm a good listener. This is because if you are upset & need to talk, i will not interrupt or try to solve your problems for you, i will just let you get it out. HOWEVER. If you are telling me a story about something funny or terrible or awful or wonderful that happened, well. I will get this glazed look in my eyes because something you said will make me think of something someone else said & then i'll remember something that happened & next thing you know i'm a million miles away. My friend Ali used to recognize it & snap her fingers & say, "Mel? Hey, Mel! Okay, when did i lose you?" HA!

I think this is my most favorite 5QF! :) Thanks, Mama M!

My pastor quoted this ages ago & i just accidentally came across it on we heart it. Loved it then & love it now. We are extremely fortunate. A good reminder when you want to complain about not having the latest whatever it is you're wishing for. :)

Fill in the Blanks.


Time to fill in some blanks! Link up at the little things we do if you want to join!

1. Fridays are just like any other weekday, except i don't have rehearsal & i get to go to sleep knowing i don't have to get up early the next morning. Oh, wait. Bootcamp at 8 am on Saturdays. Nevermind.*

2. Gorgeous weather, pedicures, theatre people, love stories & Brad make me terribly happy.

3. Something that inspires me is Art. Dance. Faith. Athletes. Strong women. Good moms.

4. If i had the day off today i would go get a pedicure, do a little shopping, meet my parents for lunch, & spend some time with my man. Since i was off today & that's what i did. :) But i'm off tomorrow too & i think after bootcamp i will just RELAX.

5. If i had to put a label on my home decor style, i would say mine is Potterybarn-ish. I don't know what you call that. But i love that style.

6. Concerning politics i would say I am way too apathetic. I just don't want to think about it. It makes my head hurt.

7. I'd like to go to Charlotte so i could ...i don't know, i've just always wanted to go there. :)

*i'm actually loving bootcamp & am very shocked that i have made the 8 am class EVERY Saturday in 2011...except for the bridesmaids dress shopping day. But other than that! Hey! That's pretty awesome!

I heart Dress Barn...& American Idol

Today was a great day!! I got out & about, and man... it is HOT. It says it's only 84 degrees today with 39% humidity, but i don't believe that for a second. It felt like 94 degrees with about 80% humidity? HOT. I was even wearing shorts. And i don't wear shorts. I'm SO glad i did, though, because really when i made that decision, i had no idea just how humid it was today! Eesh!

{My apologies to my friends who are currently desperately WISHING for any amount of sun! i love  the sun, too, i just wish we could have more spring days before it gets to be a thousand degrees!}

Despite the humidity, the insane traffic & the ridiculously slow checkout lanes, it was a fun day! I'm not saying all that to complain, just to give you a picture of how it went! Everyone's off & everyone's shopping. It's funny i don't mind the crowds around Christmas time, but today's crowds were awful! I think it's because the humidity puts people in grumpy moods. Rude teens, bad kids & slow checkout ladies! HA!

First stop: Venus Nails. This is where i go to get my pedicures & my eyebrows waxed. I LOVE the girl that does mine, she is sooo sweet & is my age! I've been going there for at least 4 years now. LOVE.

After that, i went to Target. I got 2 polo shirts for Brad, some more Luna Bars (really good for breakfast!) & some more myoplex lite (an after workout drink my trainer recommends). I also got some new eyeshadow & a huge recees easter egg for Brad. :)

After that, i PLANNED to run into Old Navy for like 5 minutes & then go home. So i wasn't too worried about the recees egg. Well, on my way to Old Navy i thought, "hmm... i think i'll run in Dress Barn & take a look". Y'all. I tried on about 7 dresses & all of them were SUPER CUTE and fit GREAT (even without spanxx on!)! YAY! When did Dress Barn get such cute clothes? I thought they had um...not so fashionable looking clothes??? I was wrong. I recently complimented someone on a shirt & they told me that's where they got it. So that planted the idea in my head. :) When i saw it, i went on in "just to see". Next thing i knew, my arms were full of dresses to try on. 

I don't even like trying on clothes. With my weight, it is always a downer. But this time was different! Now, some of you know i've been eating healthy & exercising very well this year & have seen very little results on the scale. I have not been on a clothes shopping trip at all this year. But i slipped one dress after another over my head & each of them fit perfectly! I *think* it was a size down from my usual size, but even if it wasn't... the size i used to get was a bit tight... These fit & looked great! YAY!

It was actually a case of where there were TOO MANY that i loved & had to choose!! Usually only one will work (if any!) & so that's the one i get! I had GREAT customer service by a sweet lady named Carol. She was great. They were having a sale, buy two dresses, get one $10 off. So i got 2 dresses! I needed them! I really love dresses, but being the size that i am, there are very few that look good. And it always seems like the stores carry the styles that are the LEAST flattering for me. But these were the perfect styles for me! YAY! I got one that's VERY springy & came with a little bellero jacket thingie. The other one is solid navy. I absolutely LOVE them! YAY!

Now, not to put Lane Bryant down, but in the past that's been the only place with fashionable clothes for the plus sizer. But this place had a MUCH BETTER selection than Lane Bryant & they also had WAY BETTER prices. Who knew this about Dress Barn?! Cause i didn't! And, by the way, it's not just a plus size store! I saw some very cute things in "regular" sizes also!!

SO that totally brightened my day!

Then i ran into Old Navy & didn't find anything for Brad (he really needs some slacks). I got me some of their athletic socks, because mine keep disappearing & the Old Navy ones that i have are my favorites.


During my shopping i found out my parents were heading to Cracker Barrell for a late lunch if i wanted to meet them. I had already eaten but i met them anyway. I got to-go meals for me & Brad for dinner later & my dad TRICKED ME!! We were heading to check out & i took the to-go bag from dad (the waitress gave it to him). He handed me a receipt when i asked for it so i could pay. I didn't realize he had the *REAL* receipt in his hand until i heard the guy say, "both of them together?" to my dad! HAHA! I didn't expect him to pay at ALL. I was like, "you tricked me!" & he said, "I sure did." I said, "Why???" "Because i like you." Awww. Love my dad. :) 

So we had a great time! Oh, and you may be wondering how that huge recees egg survived in the heat?! Oh, yeah. See, i did not forget about it at all, but i had stumbled upon some amazing clothes! So i didn't really care what happened to it. But yes. It melted. Brad put it in the fridge right away! HA!


And tonight i've just been chillin! Caught up on my last 2 weeks of American Idol. I know people will probably be shocked that Casey has moved down on my list of favorites, but of the last two weeks he was not my favorite. DON'T get me wrong, i absolutely like them all! Scotty is my least favorite because i'm not a huge country fan & it seems the only country singers i listen to are female ones. My mom was telling me that James is AWESOME & i only watched one of his videos (the one from this week). So i'm not sure...I should go back & watch his other one. I know a lot of people do not like Haley or Jacob & i'm not sure why. But their style of music is right up my alley, so it makes sense that i like them. Jacob's Bridge over Troubled Waters made me cry, but then that is one of my favorite songs. i LOVE haley's voice, it's just gorgeous & i love the 40's style she does at times... that duet with Casey was AWESOME! Brad said he would buy a whole cd with her singing that style (& so would i!).  I would not at all be surprised if Lauren wins the whole thing. She's the whole package, to me. I really like her personality & her voice. She's awesome!! 

So my favorites are (in order): 
Lauren, Haley, Jacob, James, Casey & Scotty.

But my predictions are (winner listed first): 
Lauren, James, Scotty, Casey, Haley, & Jacob

That's where it is for now. I kind of hope i'm wrong. But really they are ALL very talented. There's no doubt about that.

Joe, Tiffanie, Harrison & Grace

Last Sunday we had an absolutely wonderful day with some friends in town from England. Tiffanie has been my sister's best friend for 20 years! During that time, she became close to our family as well. Michelle & Tiff became best friends at 15 & have remained close all this time, even with Tiffanie in England for the last 9 years! Michelle has been to England several times to visit Tiffanie & her husband, Joe, but I've only been able to see Tiff when she's come home for a visit. This was the first time that she came & brought the whole family! It was so good to finally meet Joe (I actually remember meeting him when they first started dating, probably 12 years ago!) & their sweet children, Harrison & Grace. 

My parents hosted a BBQ at their house in celebration of Tiffanie's birthday (which was the 15th). We had an Easter egg hunt for the kids, too. We had a WONDERFUL time! I'm so glad it was a beautiful day...we stayed outside the whole time & it was lovely! (It's already too hot for that!)

Stan the Man

Hopefully i won't get in trouble for this... I did run it by my husband who said i could totally post it. Heehee!

My father-in-law came over last Saturday to help repair the roof. Brad had discovered a leak in our bedroom closet & it needed to be fixed asap! Mr. Stan headed over to help us out. I am so glad he is my father-in-law. He is a prayer warrior, so kind & also? Hilarious. He's always making me laugh. Last year, Big Red (my blazer, if you didn't know!) broke down several times & he always came to the rescue! Gotta love a father-in-law like this one!

I peeked outside at one point Saturday to see their progress & had to snap this photo. I just thought he was too cute in his camo overalls & backwards cap! By the expression on his face, i'm not sure if he was thrilled that i was taking this pic. Oops! :)


This is Brad... probably wondering what i'm doing sticking my camera out the door! HA!

(Do you know that as kids, we were so close to the Venables, that we called them Uncle Stan & Aunt Cheryl? When we got together as a couple years later, i tried to stop doing that... after all, it does sound strange to hear me call my in-laws Aunt & Uncle!! HAHAHA! Don't want anyone thinking we're into marrying our cousins or something! LOL. Sometimes i accidentally say it anyway, though! It's habit!)

Wee Bit Wednesday

Sorry I've been so absent. My theatre schedule is insane, and it seems all I have time to post during the week is silly fun questionaires, like this one. They just don't require a lot of time or thought. I have some other things to post & will this weekend! My schedule just has me on the go, all the time! I'm having fun, but am already ready for May!! Rehearsals will end, performances will begin & i'll have a bit more free time. :)

Seriously??? BUY A HOUSE! I'd save it for awhile, have a down payment & then use it after that for the monthly note. I do not plan to get a house that has a $2,000 monthly note...which means i'd have some leftover! I'd put aside some to afford bootcamp each month, a maid twice a month (for real!) & would put the rest in savings each month... i'm sure we'd need it for future children's expenses & well, our cars are both old. Not sure how much longer they'll last.

$2,000 doesn't sound like much to some, but it'd be a huge blessing for us!

In high school, it was English & Musical Theatre.
In college, it was Speech, Psychology & believe it or not, Political Science.

I love a roadtrip, but not TOO FAR! We drove to Illinois twice - that was too far. I went on a field trip to DC once...on a big charter bus...that was too far also! I like to fly. I say, 7 hours in a car...that's getting to be a bit too long for me!

Getting to know you Sunday

I had a wonderful day today! After church, we headed to my mom & dad's who were hosting a BBQ for some dear friends in town from England! I took tons of pictures & had a great time. Will post about that soon! (Hopefully!)


{ONE} What's something you've eaten & liked, but didn't think you would?

Hmm... alligator. Sounds scary, but it tastes like chicken. 

Really. :)

{TWO} Plastic Surgery...yay or nay?
Mostly 'nay'...but i would understand it in certain circumstances, of course.

{THREE} 2 things you love about spring are? 
Time to break out the flip flops!
The WEATHER! (most days!)

{FOUR} When's the last time you went on a picnic?
In February! (No, it's not cold here in February...well, at least it wasn't this year!) Me & some girlfriends met at the LSU Lakes for a picnic. I hope we do it again before it gets too hot!

{FIVE} What's your favorite app?
I don't have an iphone.

{SIX} Who does the grocery shopping in the house?
We go together. Of course there are times i stop at the store on the way home, or he does, but normally we take our big grocery shopping trips together. We're the best team, we always say we could totally win supermarket sweep! HAHA! We tag team it in the store, trying to get it done as quickly as possible. When we get home, it's an assembly line of sorts getting the groceries in the house & put away. I know this will probably end when we have kids since once of us would stay home with them. 

{SEVEN} Would you rather take a spin class or zumba?
I'm assuming Zumba, since i loved aerobics & jazzercise & have never tried Spin. But who knows?! I should try them both!

{EIGHT} How often do you go out to dinner? 
I'd say 2 times a month, but sometimes more if there is a lot going on that particular month.

a casserole for the slow cooker!

I found this recipe last week & made it last weekend. I've been meaning to post it! It's really really good! Full of veggies, delicious & hello?! It's a crockpot recipe. What more could a girl want?!

Hubby loved it as well! I realize it looks just like brown mush, and i'm sorry. He thought the chicken should be shredded & i couldn't disagree with that! I think next time, though, i might not shred the carrots quite so much! It was still amazing though & made plenty for the two of us. I'd say it serves 4-6. We had plenty of leftovers.

Chicken Mushroom & Brown Rice Slow Cooker Casserole

cooking spray
8 skinless chicken thighs about 2.5 ounces each*
2 cups canned chicken broth, reduced sodium
1/2 pound cremini mushrooms, sliced*
1 cup leeks, white & pale green parts only, thinly sliced
1 cup carrots, thinly sliced
1 cup celery, thinly sliced
3/4 cups uncooked brown rice
2 tsp Worcestershire sauce
1 tsp Dijon mustard
1 tsp dried sage
1 tsp salt
1/2 tsp black pepper

*i used chicken breasts instead of thighs. & i have no idea what cremini mushrooms are, nor could i find them. I just used 2 small cans of sliced mushrooms & i chopped them in my mini chopper. :)

Coat a large nonstick skillet with cooking spray; warm over medium heat. Add the chicken thighs and brown, turning once, about 6 minutes; set aside.

Combine the remaining ingredients in a 5- to 6-quart slow cooker; nestle the chicken thighs in the mixture. Cover and cook on low for 7 hours. Yields 1 chicken thigh and about 2/3 cup rice-vegetable mixture per serving.  


Note: Apparently browning your meat first brings more flavor to any slow cooker dish. I did brown mine first, and it didn't take much time, but i didn't notice a whole lot of difference in that & other dishes where i just threw it in! Maybe it's different if you're using chicken thighs.  



                            Anyway, it was absolutely delicious & good for you!!

#1 - FIVE QUESTION FRIDAY



1. What is your favorite sign of spring?
The gorgeous weather!
I'm not quite sure we're getting a spring this year, though...

2. What was your best birthday ever?
In my early twenties (i forget the exact birthday...22?), my mom let me have my party at her house. She fried fish & made some delicious sides to go with it. I invited 20 of my best friends & EVERY ONE OF THEM came! I felt SO loved. It was a great birthday.

3. What is your favorite dessert?
Chocolate chip cookies. Fresh out of the oven.
I'm also a fan of cheesecake. Though i might get some once a year.
I have never been a fan of wedding cake until this year. I don't know where that came from, but i wish i still hated it! Mmmm. I had it for my birthday cake this year!

4. What's the best excuse you've ever used to get out of a ticket?
I've gotten a lot of tickets...not in the last 10 years, but when in my late teens/early twenties. I never got out of any of them, or even tried! I normally just apologize & hope they have pity on me! But i'm not going to make up some excuse! Only one cop has ever let me off with a warning!

5. Do you wake up before your alarm, with your alarm, or after hitting snooze several times?
In typical day-to-day life? With my alarm.
When i'm just plain exhausted from burning the candle at both ends (like this week)? After hitting snooze several times!
I do sometimes wake up before my alarm if i've gotten enough rest. But that NEVER happens on a weekday (except today because i didn't have to be at work until 9:30!).

#2 - FILL IN THE BLANK FRIDAY


1. My favorite daily responsibility is...This question is hard for me to answer without breaking it down...
At Home - I never mind doing the dishes & i love to cook.
At Work - I like being organized there & i like paperwork in general (i know. weird.)
At the Theatre (as a stage manager) - Being the director's secretary (that is basically what a stage manager is!), helping actors with their lines, calling cues.


2. My least favorite daily responsibility is...
At Home - Dusting, bathrooms & floors. Oh, and drying my hair.
At Work - PA ERRORS. I know that makes no sense to you, and that's okay. Just know that they are going to be the death of me (they were the reason for my tears Monday & Tuesday).
At the Theatre - Noting the blocking in the script! I'm not good at it! I always miss something. And then feel stupid when the actor is like, "Wait. Am i supposed to cross here?" & i'm looking in my script, trying to figure out my own abbreviations & everyone looks at me... usually i make up something or just tell them they're in the right spot.

3. My favorite cuisine to eat when going out is MEXICAN.


4. My favorite cuisine to prepare at home is just some good ol' country cookin'. :)

5. Andy Warhol said that everyone is famous for 15 minutes. What is your claim to fame?
Um....Little Becky Two Shoes? Can that be my claim to fame? Because that was my favorite musical theatre experience EVER!

6. If i could have three wishes, i would wish for (1) A HOUSE with 4 bedrooms & a porch near or on the LSU lakes, (2) healthy happy kids who love God and are a joy to be around, & (3) enough money for all of our needs & most of our wants. :)


7. My biggest pet peeve is STUPID PEOPLE. I'm not trying to be mean. But i deal with them on a daily basis & it really brings out the worst in me! And honestly... i'm not expecting much here... just for people to read instructions (that have been written in an 18 font, highlighted & sticky noted!) would be fabulous! I really have more, but "stupid people" pretty much sums them up!


YAY! Okay. It's now 1 am & i'm not in bed. WHY?????? I have bootcamp in the morning!
