Cheesy Vegetable Chowder

I have about 3 difference Broccoli Cheese Soup recipes pinned on Pinterest... finally decided to try one of them this week! And, know what? It was DELISH!

Actually, it's not technically broccoli cheese soup! But by the looks of it... that's what I keep calling it! Anyway, it was really good. Hubby agrees!


Cheesy Vegetable Chowder
Adapted from Lulu the Baker
 Serves 8.

2 Tablespoons butter
1/2 cup chopped onion
1 1/2 cup finely chopped carrot
1 cup finely chopped celery
1 tablespoon minced garlic
4 cups chicken broth
1 yukon gold potato
1 Tablespoon flour
1/2 cup water
2/3 cup milk
3 cups frozen broccoli florets, thawed
2 heaping cups shredded cheddar cheese

1.) Melt the butter in a large soup pot.  Add onions, carrots, and celery and saute over medium heat until tender.  


 2.) Add garlic and cook 1 or 2 additional minutes.  Add chicken broth and potatoes, bring to a boil, and cook until potatoes are tender.  

3.) Mix flour with water, add, and simmer until soup is slightly thickened.  (My soup didn't thicken very much, but i didn't add more flour because it's not the best thing for me! Just so ya know, it was delicious anyway!) 

4.) Add milk and broccoli and cook until broccoli is just tender and soup is heated through.  Stir in cheese, allow to melt, and serve.

DELISH!!
