I LOVE to cook. Absolutely love it.

What is funny is that I never had an interest in cooking at all before i got married. My sister, my mom, & my grandmother & great-aunt on my mom's side are all fantastic cooks. I never had any interest in it whatsoever, and I took that as a sign that it was not meant to be. I kind of thought my lack of interest indicated that I wouldn't be very good at it. However, when i got engaged i was suddenly very interested. I began to try recipes all the time...and i discovered my love for cooking.

You will see in my early recipes that i doubted myself a lot & would only do things EXACTLY as the recipe said. I was afraid to experiment. Now, however, I love to experiment. I still have a lot of learning to do. I still have to call my mom or mother-in-law to ask questions. And i still worry half-way thru & warn Brad that we may have to order a pizza! But so far, we haven't had to do that... everything has turned out just fine! (So far, anyway! Ha!)

Disclaimers: i know saying "mexican" is laughable. No, it's not authentic mexican food - just my attempts at enchiladas & tacos & the like! "Cajun" is also laughable. Though born & raised in Louisiana, i have never really attempted to cook "cajun" dishes. My jambalaya is delicious but not made from scratch...and the "red beans & rice" is really my first attempt at a cajun dish! All that to say... i am going to attempt more cajun recipes in the future. :) As for "skinny recipes", that just means they are either nutritious (aka full of veggies) or lower in calories or fat... I have added the nutrition facts to some of these & will do so to the rest in the near future. :)
